In 2023 whole bunches were pressed and settled overnight, racked to tank for fermentation, then split between seasoned French barrels and stainless steel for a short spell on lees before bottling. The fruit comes from 1996 plantings at the property’s eastern edge, beside the Serré Pinot Noir rows, plus a small parcel near the dam, all certified organic.\u003c\/p\u003e\n\u003cp\u003eFull-flavoured but linear, with citrus, herb and chalk, layers of savoury complexity, and brisk acidity keeping order. Serve at 10 to 12 degrees.
