Destemmed in full, as is usual here, the fruit fermented on skins for ten days before pressing to French oak hogsheads with 40 per cent new, then rested on lees until February 2025. The vineyard is small and old: 1.2 hectares of own-rooted MV6 planted at 9,000 vines to the hectare in 1984 and 1986, on volcanic, basalt and limestone-rich soils with north-south rows, farmed organically and cropping at very low levels.\u003c\/p\u003e\n\u003cp\u003eDark fruit, savoury spice and a herbal thread, multi-layered and intense, with tannin that grips and holds. Serve at 16 to 17 degrees, decanted. Roast duck, venison, or a mushroom and lentil braise.
