Hand-picked parcels had fermented separately on wild yeast with roughly 10 per cent whole bunch and a carbonic portion. Fruit comes predominantly from the south-facing Winery Block, planted in 1990, and the Range Block from 1974, with some declassified high-density De La Roche included. Matt Holmes has cut back the new oak over the years, reading the mature Winery Block as inherently savoury and best left alone.\u003c\/p\u003e\n\u003cp\u003eSavoury and mineral more than sweet, with dark berry, black pepper, graphite and dried herbs over fine, firm tannin. Serve at 16 to 17 degrees.
