The reasoning is straightforward: the mature, south-facing Winery Block, planted in 1990, carries plenty of savoury character on its own account, drawn from clay and limestone, old vines and thin soils, and less wood lets that read more clearly. Some declassified De La Roche fruit from the 2007 planting joins it. Everything sits on volcanic scoria over basalt, clay and loam with a limestone-clay base. Wild ferment, 10 per cent whole bunches, two weeks on skins.\u003c\/p\u003e\n\u003cp\u003eMedium-weight and savoury, with blackberry, pepper, dried herbs and a graphite streak. The tannin is fine and the finish dry. Serve at 16 to 17 degrees.
