After pressing, the wine went to hogsheads and puncheons with 10 per cent new, sat untouched for ten months, then finished in 1,200-litre old oak vats for a further six. The blend leans on the south-facing Winery Block from 1990 and the Range Block from 1974, plus high-density De La Roche declassified into it, all on scoria, basalt, clay and loam over limestone-clay.\u003c\/p\u003e\n\u003cp\u003eOld oak keeps it quiet. Graphite and pepper sit alongside dark berry fruit, with a savoury core and fine, drying tannin. Serve at 16 to 17 degrees.
