Kelley works more solids into the ferment with each vintage, and the wines take their drive from time on lees in old, low-toast Burgundy barrels. The picking method is unusual: two passes through the vineyard, crushing the sun-exposed fruit for extract and whole-cluster pressing the shaded side on a long, firm cycle, then fermenting on indigenous yeast.
