Everything else held steady: two lots at harvest, the sunny side crushed for extract and the shaded side pressed as whole clusters, indigenous ferments, and eight-year-old low-toast Burgundy barrels, with more solids each year building texture on lees.\u003c\/p\u003e\n\u003cp\u003eChalky and full of tension, marrying the texture of well-ripened Chenin Blanc with clarity, fine-boned structure and impressive length. Serve at 10 to 12 degrees.
