The couple began making their white wine in Chablis in 2012, drawn particularly to the purity and clarity of Chardonnay from this part of Burgundy.\u003c\/p\u003e\n\u003cp\u003eThe Chardonnay comes from the plateau behind the village of Beines. The fruit is pressed within an hour of harvest directly to stainless steel, then cold-settled and racked clear within 48 hours. Fermentation occurs naturally at cool temperatures, followed by natural malolactic fermentation, before the wine spends three months on fine lees without stirring.
