The white expression draws on late-harvest Gewürztraminer and, unusually, on a small quantity of Gewürztraminer Eiswein; the rarity of those base wines accounts for both the price and the texture, since they bring full-bodied sweetness alongside a crystalline acidity that keeps the finished drink fresh. Onto that base go wormwood macerates, which supply the delicate, well-integrated bitterness that makes a vermouth a vermouth, together with a botanical mix of some twenty ingredients including anise, cardamom, coriander, cloves and orange peel. The result is fresher and fruitier than most of the sweet white category, leaning towards almond meal and honey rather than heavy caramel.\u003c\/p\u003e\n\u003cp\u003eServe chilled at 6-8°C over ice with light tonic and a citrus wheel.
