Both are planted to Aligoté Doré, the low-yielding, higher-quality strain of the grape, and old material of this sort is increasingly hard to find. The wine fermented and matured in seasoned 12-hectolitre oval casks and glass Wineglobes, a combination that builds texture without adding wood flavour, giving a creamy, layered Aligoté that keeps its vibrancy.
