The backbone of this wine is his parcel of fifty-year-old vines in Meursault, planted to Aligoté Doré, the low-yielding, higher-quality cultivar and not the productive strain that gave the variety its reputation. The winemaking is precise and unshowy, which is what this grape asks for: it has acidity to spare and rewards a light hand more than a heavy one.\u003c\/p\u003e\n\u003cp\u003eBracing, dry and clean, with green apple, lemon pith, a chalky bite and a saline finish. Serve properly cold, 10 to 11 degrees.
