Leroux built his business in Beaune on exactly this kind of blending, and he applies the same cellar work at every level of the range. Whole-bunch fermentation was used only on the components grown by the estate itself, with the rest destemmed. Maturation took place in 2,200-litre Grenier oak casks, large enough that the wood leaves no imprint on the fruit.
