The Dessus benefits from a steeper slope and lighter, stonier soil, which gives a more tensile wine than the broader, softer style of the lower vineyard. Leroux acquired these vines after the 2017 harvest through a hard-fought tender that also brought him village plots including Clos du Village, parcels in Volnay Santenots and Meursault-Blagny. His holding here was planted in 1988. Winemaking follows his usual pattern for whites: whole-bunch pressing without crushing, a light settling, fermentation in cask with modest new oak and a long élevage on lees, all aimed at texture rather than weight.\u003c\/p\u003e\n\u003cp\u003eBest from around three years and good for ten or more, it suits roast veal, brill in butter or a mature Comté.
