Asked years ago which Volnay vineyard he would most like to work with, Leroux named Santenots without hesitation, before going on to Rugiens and Caillerets. The parcel is estate-owned and farmed organically, and it was among the first he picked in this vintage. Thirty per cent of the bunches went into the ferment whole.
