The estate farms organically. Both varieties are hand-harvested and each is given a measure of skin contact before wild-yeast fermentation in a mixture of stainless steel and large French and Austrian oak. That combination gives a wine with more intensity and grip than the price would suggest, silky in texture and savoury rather than fruity in emphasis.\u003c\/p\u003e\n\u003cp\u003eDrink now and over the next four or five years.
