What separates them is position and soil: this parcel lies a little higher on the slope, on complex ground marked by exogyra virgula, the small comma-shaped oyster fossil that gives Kimmeridgian Chablis its signature. In the family's reading that produces a straighter, spicier, chalkier wine than the rounder Montmains, which is why the two are now kept apart. Maturation is split between temperature-controlled tank and barrel, giving a touch more breadth than the village wines without any obvious oak character, and the wine keeps the intensity and fine-boned finish that mark the house style.\u003c\/p\u003e\n\u003cp\u003eDrinking well from release and likely to improve over five to eight years.
