The estate still works with its own selection of that clone and ferments with native yeasts. The annata, or standard Brunello, comes from mature vines and spends an extended period in large Slavonian oak casks, a traditional approach that favours finesse and longevity over weight and new-wood flavour. The house style is restrained in alcohol and marked by fresh acidity and fine tannins.\u003c\/p\u003e\n\u003cp\u003eOpen it an hour or two ahead and serve at around 16 to 18 degrees. Bistecca alla Fiorentina, wild boar ragu, roast pigeon or aged pecorino are traditional partners.
