The 2020 runs roughly sixty per cent Sauvignon Blanc to forty per cent Chenin Blanc, both from blocks of biodynamic vines more than twenty years old at Quindalup, where sand and gravel sit over a granite base. Each variety was hand-picked and fermented on its own wild yeasts in stainless steel, with a short spell on skins and a touch of old oak for shape, then blended and bottled without fining.\u003c\/p\u003e\n\u003cp\u003eCitrus and cut grass with a little tropical weight behind, finishing chalky and gently textural. Drink it cold, around 8 to 10 degrees.
