Both of Ben and Naomi Gould's vineyards, at Wilyabrup and Quindalup, are certified organic and biodynamic, which is rare in the region, and every addition that goes into a wine, of which there are almost none, is listed publicly on their website. Ben even wrote a book on the subject. The 2022 is 98 per cent Sauvignon Blanc with a whisper of Chenin, from twenty-plus-year-old vines on sand and gravel over granite, wild-fermented in steel with a little skin contact for colour and grip, and bottled without fining.\u003c\/p\u003e\n\u003cp\u003eNettle, lime and white peach, dry and clean, closing with a light phenolic tug from the skins. Serve at 8 to 10 degrees.
