The change that matters more happened in the winery: the fruit went to three vessels, stainless steel, old French barriques and a concrete egg, and each brings something different, the steel holding aroma, the barrels adding breadth, the egg giving a rounder middle. Both varieties come off twenty-plus-year-old biodynamic blocks on sand and gravel over granite. The parcels were left to finish malolactic conversion before blending, and the wine went to bottle unfined.\u003c\/p\u003e\n\u003cp\u003eThere is real texture here for the money: grapefruit and lemon curd over a soft, slightly creamy palate, dry and long. Serve at 9 degrees.
