Picking one property gives a tighter, more consistent wine than the blends drawn across two vineyards in earlier years. The grapes were pressed to tank, with a small share going to seasoned barriques, and fermentation started on wild yeasts without any intervention. Nothing is added beyond a small amount of sulphur, and nothing is fined out. Ben and Naomi handle every step at the winery themselves.\u003c\/p\u003e\n\u003cp\u003eLemon and passionfruit with a leafy top note, dry and crisp, lightly textured from the barrel portion. Serve well chilled, around 8 degrees.
