Fermentation is stopped short: the wine goes to bottle with 20 to 24 grams of residual sugar still in it and finishes dry in there, which is the old rural method, not the Champagne one. Eighteen months on lees follow, then riddling and disgorgement by hand at the winery. Everything happens on site, which is how the Goulds prefer it, since they do their own pruning, picking, pressing and bottling.\u003c\/p\u003e\n\u003cp\u003eDry and brisk, with green apple, lemon and a bready lees character from the long ageing. Serve properly cold, 6 to 8 degrees.
