Margaret River Cabernet gets treated the way a Valpolicella producer treats Corvina: the base wine, from twenty-plus-year-old vines at both Quindalup and Wilyabrup, is foot-crushed and wild-fermented, then re-passed over the skins left behind by Bernard, the air-dried Amarone-style Cabernet from the same harvest. That dried fruit makes up about a tenth of the blend. A glug of Merlot goes in, maturation happens in used oak, and the wine is bottled unfiltered. There is nothing else quite like it on the Australian market.\u003c\/p\u003e\n\u003cp\u003eDense and faintly raisined at the edges, with black fruit, cocoa and dried herb over tannin that has been stretched long and soft. Serve at 17 to 18 degrees.
