Part of the crop was air-dried before fermentation, the appassimento method used in Valpolicella, which concentrates sugar and flavour and, Gould finds, lengthens and softens the tannins at the same time. The rest was fermented as normal on wild yeasts, with no acid additions and no fining. Maturation took place in mature oak. It is an odd approach for Margaret River and a convincing one.\u003c\/p\u003e\n\u003cp\u003eRipe cassis and dark plum with a savoury, faintly dried-fruit edge and fine long tannin. Give it an hour open and serve at 17 degrees.
