The long-term plan is to graft more Chardonnay over to it, then propagate from the best of that material. The Chardonnay itself is old Gin Gin clone, past twenty years of age and cropping very low, and Gould has patiently converted the vines from spur to cane pruning. Both parcels were hand-harvested, foot-stomped and fermented on wild yeasts, four-fifths in old barrels and the rest in a concrete egg.
