Aligoté climbs to six per cent, from eight-year-old vines, still the only plot of the variety anyone can find in the region and slowly being extended by grafting over adjacent Chardonnay. The Chardonnay is low-yielding Gin Gin, more than twenty years old, converted by hand from spur to cane pruning. Fruit was foot-stomped and wild-fermented, with the concrete egg share up to forty per cent this year and the balance in old barrels. Malolactic conversion happened in the same vessels, and the wine rested nine months before a rough filtration.\u003c\/p\u003e\n\u003cp\u003eRacy and fine-boned, with white peach, lemon pith and a sappy, drawn-out finish that keeps its shape. Serve at 11 degrees.
