Three-quarters of the fruit fermented in stainless steel and the rest in a concrete egg, with malolactic conversion finishing in the same vessels and twelve months on lees afterwards to build texture without borrowing flavour from wood. The Chardonnay block is very low-yielding, the vines past twenty years old; the adjacent Aligoté plot, about 150 ten-year-old vines, contributes eight per cent, and Gould keeps grafting more Chardonnay across to build it out. Only a rough filtration before bottling, to keep the wine close to the vineyard as he puts it.\u003c\/p\u003e\n\u003cp\u003eBright and pulpy, with grapefruit and green apple, racy texture and a long sappy finish. There is a lot of wine here for the money.
