This comes off the Quindalup vineyard, sand over pea gravel with a granite base, farmed biodynamically. The bunches were pressed whole, with most of the juice going to old oak barrels for wild fermentation and a smaller share to concrete eggs, which fills out the texture and lifts the aroma. Mike Bennie has called it legendary juice, which is a fair description of the pleasure-to-price ratio.\u003c\/p\u003e\n\u003cp\u003eSoft and rounded, with quince, citrus and a chalky dry finish. Serve at 9 to 10 degrees.
