After that the fruit was crushed by foot, basket-pressed, and given a few months in old barrels before bottling. The Shiraz comes from twenty-plus-year-old vines at the Goulds' biodynamic Quindalup vineyard on the coastal flats of Margaret River, where sand over pea gravel and granite keeps vigour down and brings picking forward.\u003c\/p\u003e\n\u003cp\u003eLip-smacking and earthy, with red cherry, pepper and hardly any tannin to speak of. Serve lightly chilled at 13 degrees and drink it within the year.
