A frozen bucket of Shiraz juice goes in for colour, and in 2021 a little Semillon and Cabernet Sauvignon were added to balance things out. Once the wine was close to dry it went to bottle to finish fermenting, which leaves a gentle natural fizz and a light haze. This is méthode ancestrale, made with no additions of any kind. Quindalup is certified organic and biodynamic, on sand over pea gravel with granite beneath.\u003c\/p\u003e\n\u003cp\u003ePastel-coloured and gently sparkling, with red apple, strawberry and a dry, faintly yeasty finish. Serve at 7 degrees, and expect a little haze in the glass.
