The 2022 is two-thirds Sauvignon Blanc and one-third Chenin Blanc, the Chenin off their Quindalup vineyard and the balance from organic growers they trust around Margaret River. Fruit was hand-harvested and wild-fermented on skins, which gives the sunset colour and the light tannic frame. Nothing was added except a dash of sulphur, which is what you would expect from the author of a book called What's In Your Wine.\u003c\/p\u003e\n\u003cp\u003eLighter than most skin-contact whites, with nectarine, lemon curd and a saline finish, the tannin gentle. Serve lightly chilled at 11 to 12 degrees.
