The site is certified organic and biodynamic, sand over pea gravel on a granite base. The blend shifts too, to 80 per cent Chenin Blanc and 20 per cent Chardonnay, giving a broader and more textural wine than the Sauvignon-led versions. Hand-harvested fruit fermented spontaneously on skins, plunged by hand for the first few days, then pressed to tank and barrique, with full malolactic conversion.\u003c\/p\u003e\n\u003cp\u003eFlavour-packed and lip-smacking, with poached pear, citrus rind and a nutty edge from the barrel, finishing juicy and dry. Serve at 12 degrees.
