A wet winter gave way to a mild, unhurried spring and a summer without heat spikes, so ripening was even and harvest ran at a measured pace from mid-February to late March. Heavy Marri blossom kept the birds occupied and the nets in the shed. Two estate blocks supply most of the fruit, picked across four dates, foot-crushed in open pots for a wild ferment, hand-plunged for four to six days, then pressed to steel and seasoned oak.\u003c\/p\u003e\n\u003cp\u003eFresh and balanced, with baked apple, honeysuckle and lemon, a subtle barrel-ferment warmth and a dry textural finish. Serve at 12 degrees.
