That gives a plumper, rounder version of this wine than most years. All the fruit is Quindalup, mostly from vines over twenty years old, hand-picked, foot-crushed and wild-fermented in large open pots. It was then basket-pressed to old oak for nine months before blending. The only addition is a small dose of sulphur, under 60 parts per million, and both Gould vineyards hold organic and biodynamic certification.\u003c\/p\u003e\n\u003cp\u003eJuicy and fragrant, with dark plum, red cherry and a savoury finish, tannins barely making themselves known. Serve at 16 degrees, or slightly cooler on a warm evening.
