All the fruit came from the single Quindalup vineyard, certified organic and biodynamic, on sandy soil over pea gravel and a granite base. The grapes were hand-picked and fermented in open pots with daily hand-plunging, then pressed to French barriques and left nine months before blending and bottling. The only thing added is a small amount of sulphur.\u003c\/p\u003e\n\u003cp\u003eCassis and dark plum with a leafy savoury lift and finely grained tannin, more serious than the price implies. Serve at 17 degrees after twenty minutes open.
