The Chenin Blanc is hand-picked from the Goulds' Margaret River vineyard, where sand sits over pea gravel on a granite base, and goes into the amphorae to ferment spontaneously on its skins. It rests there for a hundred days. The free-run juice is then passed through a stainless-steel sieve and runs straight to the bottling line, with no acid, no fining and no sulphur at any point. Qvevri winemaking is the oldest continuous method there is, and this is one of very few Australian wines made that way.\u003c\/p\u003e\n\u003cp\u003eTextural and savoury, with quince, dried pear, orange peel and a firm phenolic grip, the fruit sitting under a light haze. Serve at 12 degrees.
