Gould applies it to Sauvignon Blanc, which nobody does. Part of the crop was picked early by hand and air-dried before fermenting spontaneously on skins; the rest was basket-pressed and fermented naturally across old French oak, stainless steel and a concrete egg. The batches were combined and the lees stirred occasionally for seven months, then bottled cloudy to hold the orange tint. The Wilyabrup vineyard behind it is farmed biodynamically.\u003c\/p\u003e\n\u003cp\u003eFamiliar Sauvignon fruit taken somewhere unexpected: blackcurrant leaf, mandarin and a dusting of North African spice, with real texture and a dry grippy finish. Serve at 12 degrees.
