Varietales is built on Albarino with 20% Caino Blanco, 20% Loureiro and a drop of Treixadura. Winemaker Jorge Marcote is evangelical about Caino Blanco in particular, a difficult, late-ripening variety that contributes piercing acidity and phenolic bite; Loureiro adds floral aromatics and Treixadura a little flesh. The winemaking follows the same lines as the estate's straight Albarino: hand-harvested fruit, an overnight rest at ten degrees, slow fermentation at cellar temperature in stainless steel with a small portion in French oak, then six months undisturbed on lees. What comes out is a Spanish white with real tension, a steely kick and stony extract behind the yellow stone fruit.\u003c\/p\u003e\n\u003cp\u003eDrink now or over the next four to five years.
