Unico is made only in vintages the house judges worthy, from old Tinto Fino vines with a portion of Cabernet Sauvignon whose original cuttings were brought from Bordeaux in the estate's first years. Its defining feature is the ageing: an unusually long passage through large oak vats and barrels of varying age and size, then further years resting in bottle in the cellars before release, which typically comes about a decade after the harvest.
