The Bernard 76 vines are approaching thirty years old, their roots pushing through shallow clay into limey rock and a limestone base. Andre and Selina hand-pick and press slowly, without shielding the juice from oxygen, then ferment on wild yeasts in large barrels, a quarter of them new, at warm temperatures, which they say encourages richer mouthfeel and nutty, complex flavour. The wine stayed in oak until December, then moved to tank until February.\u003c\/p\u003e\n\u003cp\u003eFlinty at the core, wrapped in ripe citrus and stone fruit, with the restraint and precision that mark out good Australian Chardonnay. Serve at 12 degrees.
