The ground there is rocky clay with enough marine influence to hold temperatures down, and the Fiano grown on it has thick skins and plenty of natural acidity. All three parcels came off in the second week of March, a fortnight later than normal. After a short spell on skins the fruit was pressed gently to old oak and stainless steel, then left on light lees until June before blending.\u003c\/p\u003e\n\u003cp\u003eLong hang time has given a bright, fresh white with real texture: lemon, green pear and a saline, pithy close. Serve at 10 degrees.
