The fruit comes from fourteen-year-old vines on rocky clay loam over the Kurrajong formation, a geology McLaren Vale growers speak about with some reverence, in the foothills behind Willunga. Farming there runs on minimal inputs, and the winemaking matches: hand-picking, nothing added, and bottling without fining or filtration. A portion of the crop was fermented as whole bunches, and the wine spent thirteen months in seasoned French hogsheads. The Spanish name is deliberate, since the aim is something medium-bodied and savoury instead of the tannic heavyweight the variety usually becomes here.\u003c\/p\u003e\n\u003cp\u003eBerry fruit and exotic spice on the nose with a whole-bunch lift, then a savoury mineral palate with fresh structure. Serve at 16 to 17 degrees.
