Around sixty per cent was destemmed and fermented on indigenous yeast in tank before pressing to old barrels; the rest fermented as bunches and sat three months on skins in ceramic eggs. Blended and bottled without fuss. Andre Bondar treats the variety as a fresh red, not a project for new wood.\u003c\/p\u003e\n\u003cp\u003eCool and brightly flavoured, true to a mild season — blue fruits, spice, the earthy streak that belongs to the grape. Balanced through the middle, unctuous at the close.
