At its heart is still the deep sand along the vineyard's western edge, Pirramimma sandstone country, farmed organically without irrigation; the rows face east, so the vines escape the harshest summer sun and set small, concentrated bunches of their own accord. Cellar work is minimal as ever — a fifth of the crop fermented on its stems, half a year split between ceramic and French wood, and no fining or filtration before bottling.\u003c\/p\u003e\n\u003cp\u003eBright red fruit and dried herb over a firmer core than the perfume suggests, finishing dry and mineral. Serve at 16 degrees.
