Each was vinified separately and blended late. The Rayner fruit fermented warm in old oak to build mouthfeel and pull out savoury flavour; the remainder fermented cool with some solids in stainless steel to hold brightness and fruit purity. That split is the whole trick to a rosé with something behind the freshness, and it is why this drinks with more presence than its pale colour suggests.\u003c\/p\u003e\n\u003cp\u003eFleshy red fruit, a savoury edge, and clean dry length. Serve at 8 to 10 degrees — too cold and you lose the texture.
