The Bonnaire family settled in the village in the 1930s and farms a little over twenty hectares, the majority of it here. This cuvée is a single village wine, drawn only from Cramant fruit and made as a vintage blanc de blancs, held on lees in the cellars beneath the village for an extended period and disgorged extra brut at five grams per litre.\u003c\/p\u003e\n\n\u003cp\u003eDry and chalk driven with the breadth Cramant tends to give, it suits scallops, roast white fish and young hard cheese; serve at around ten degrees.\u003c\/p\u003e\n\n\u003cp\u003e\u003cem\u003e*Every effort is made to ensure the current vintage is accurate; however, variations can occur.
