More than two-thirds of this wine comes from Beechworth, where elevation helps keep acidity fresh, with the balance from the Hunter Valley. French oak is used with a light touch so the grapefruit and juicy citrus stay in front, while a subtle bran-meal note adds texture. The winemakers say the final components of the blend almost selected themselves, and the long, pure line of acidity is the driving force of the wine.\u003c\/p\u003e\n\u003cp\u003eWell chilled but not ice-cold is ideal, around 10 to 12 degrees.
