Barbaresco requires a minimum of two years ageing before release, one of them in wood. Fermentation is with native yeast and maturation takes place in oak.\u003c\/p\u003e\u003cp\u003eDecant and serve at 17 degrees with veal, mushroom risotto or hard cheese.
