The site is believed to be the first organically certified vineyard in New South Wales, and he has worked with it for a dozen years. This vintage, 85 per cent of the fruit was destemmed into three-tonne open fermenters for a four-day cold soak and a ten-day ferment on skins, then pressed lightly to 500-litre barrels with just five per cent new oak for ten months.\u003c\/p\u003e\n\u003cp\u003eRed-fruited, pretty and refined, with woodsy spice underneath and a floral, savoury lift at the edges. The frame is textural, which is how Jeff Byrne likes his Pinot.
