Cassinasco is one of them. Moscato has been grown in this pocket around Canelli since the thirteenth century, and its chalky soils and altitude have long been regarded as the region's best for the variety. Alessandro Boido's Sant'Ilario comes from a single hectare of seventy-year-old vines on a south-facing, limestone-rich hillside some ten kilometres from the winery. The wine is made in the usual way for the style, with fermentation halted under pressure to retain natural sweetness, gentle sparkle and low alcohol, but the old vines and the site give it a restraint and a fine chalky texture rarely found here. It is a notably fine-boned example of a style too often dismissed as frivolous.\u003c\/p\u003e\n\u003cp\u003eDrink young, within two or three years, with fresh peaches, a hazelnut cake or a blue cheese.
